Buffalo Trace has released a new bourbon called Eagle Rare 25, which is a 25-year-old Kentucky straight bourbon whiskey. This is an anomaly because most bourbons are not good at 25 years old. However, the team at Buffalo Trace Distillery figured out how to age bourbon for a quarter of a century without it becoming overly tannic or astringent.
